Coconut, Banana, and White Chocolate Muffins & Tea, Please!

This morning I whipped up a batch of Gluten Free muffins - 22 heavenly moist & fluffy muffins. This time around I decided to try a few new ingredients - and I'm glad I did - they are the best tasting muffins that I've had in a long time. I guess that statement is a bit unfair, as I haven't made muffins in months. However, with one bite I'm certain you'd be convinced & you wouldn't even guess they are gluten free! Better yet, they were made with a mix of GF flours including almond flour to give it a punch of protien.
White chocolate in the morning? Yes please, with a spot of tea!

Gluten Free Contemplation

For a while now I've been trying to come up with a quick & easy dessert that could be made into two single serving portions. To add to that list, the dessert would also need to have the ability to be gluten free. When I was browsing Epicurious, I came across one of my favorite childhood desserts: Apple Brown Betty. This dessert is easy to whip up in minutes and only has one ingredient that would need to be switched up!
